Zucchini Bread

This recipe is from my childhood, so delicious. 





  • 1 1/2 cups sugar, 297g
  • 2 cups finely chopped zucchini, unpeeled (approx. 2 medium), 390g
  • 3 eggs, beaten
  • 3/4 cup vegetable oil, 154g
  • 3 cups all-purpose flour (note: sub 1 1/2 cups whole wheat flour), 370g
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts, optional, 150g

Combine sugar, zucchini, and eggs; add oil and beat. 

Blend in dry ingredients. Stir in vanilla and nuts. Pour batter into 2 loaf pans. 

Bake at 350°F for 1 hour.
