Zucchini Bread
This recipe is from my childhood, so delicious.
- 1 1/2 cups sugar, 297g
- 2 cups finely chopped zucchini, unpeeled (approx. 2 medium), 390g
- 3 eggs, beaten
- 3/4 cup vegetable oil, 154g
- 3 cups all-purpose flour (note: sub 1 1/2 cups whole wheat flour), 370g
- 1½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon vanilla extract
- 1 cup chopped nuts, optional, 150g
Blend in dry ingredients. Stir in vanilla and nuts. Pour batter into 2 loaf pans.
Bake at 350°F for 1 hour.
