Peanut Butter Bars


Crust:

  • 1 c graham crumbs & opt ground oats (120g)
  • 1 c pretzel crumbs (120g)
  • 1/2 c butter, melted (113g)
  • 1 c powdered sugar (120g)
  • 1 c peanut butter (264g)
  • Mix-in, optional 
In medium bowl or food processor, mix together the crumbs, butter, sugar, and peanut butter. Press peanut butter mixture into bottom of an ungreased 9×9 pan. 

Topping:
  • 1 1/2 c chocolate chips (270g)
  • 1/4 c peanut butter (66g)
  • Flake salt to sprinkle, optional 
Melt remaining peanut butter and chocolate chips together in the microwave in 30-second intervals, stirring in between. When the chocolate mixture is smooth, pour over top of the peanut mixture in the pan. Refrigerate for 30 minutes, then cut into 16 squares. Sprinkle with flake salt if desired.
