Cowboy Cookies

 


Toast pecans and melt butter. 


1 1/4 c AP Flour 

3/4 tsp Bkg powder 

1/2 tsp Bkg soda

1/2 tsp Salt


Whisk.


12 Tbsp butter, melted and cooled 

1 1/2 c light Brown sugar

1 lg Egg and 1 egg yolk 

1 tsp vanilla 


Add in wet ingredients. Gentle whisk until just incorporated. 


1 cup pecans, chopped and toasted

2/3 cup semi-chocolate chips 

1 cup sweetened shredded coconut flakes 

1 1/4 c rolled oats


Gently fold until combined. Use large 1/4 cup scoop, makes 16 cookies. 8 cookies per sheet pan. Bake until set around the edges but still little raw, soft, pale in the center. Bake at 350° for 15-17 minutes rotating the pan halfway through baking. Bake only one sheet pan at a time. Let set on sheet pan 5 minutes before transferring to wire rack to cool completely. Suggest to freeze 8 dough balls.
