Christmas Baking: Peanut Butter Buckeye's and White Chocolate Treats
These are my all time favorite candy! "They are called buckeyes because they are shaped like the famous nut of Ohio's state tree as well as Ohio State's symbol." Tonight was my first time making them. The peanut butter balls were really easy to shape, but dipping the chocolate and making sure only the bottom and sides are coated was somewhat difficult. A high sided small bowl and baby fork ended up being the best equipment for the job.
- 1 (2-pound) bag confectioners' sugar
- 3 cups creamy peanut butter
- 3/4 cup butter, softened
- 1 (7-ounce) tub dipping chocolate, melted according to package directions
1. Line a large tray or baking sheet with wax paper. In a large bowl, combine the confectioners' sugar, peanut butter, and butter, stirring until well blended. Shape into one-inch balls.
2. With a toothpick, dip each ball into the dipping chocolate until almost covered, leaving some of the peanut butter mixture exposed on top. Place the balls on the tray and refrigerate until firm, about two hours.

White Chocolate Treats
And these are my second favorite candy :o) We've made these for years in my family and all love them. They are crunchy, sweet and salty all in one. This year I added some holiday sprinkles to jazz them up, but traditionally we just dip them and leave plain.
- 3 bags white chocolate chips
- 4 sleeves Town House crackers
- Creamy Peanut Butter
Spread peanut butter on crackers, top with another cracker. Continue doing so for all four sleeves of crackers.
Melt package of white chocolate in medium bowl, one minute at a time until all is smooth.
With fork dip each cracker sandwich on chocolate covering both sides. Place on wax paper. Cool.
I also did some dipped in melted butterscotch chips for the first time. They're great too!
