Crust:

  • 1/2 cup butter, melted 
  • 2 Tablespoons brown sugar
  • 1 cup AP flour

Preheat oven to 325°. 

Line a 8x8 baking dish with foil (can double for 9x14). In a medium bowl, using a fork, combine all ingredients listed above to form a soft dough  Press into baking dish and bake for 12 minutes or until crust edges slightly become golden brown. Set aside.

Filling:

  • 2 tablespoons AP flour
  • 1 1/4 cups brown sugar 
  • 1 teaspoon baking powder 
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon vanilla 
  • 1/2 cup sweetened coconut
  • 1/2 cup chopped pecans

Mix in order and spread over crust. Bake for 20 minutes. Allowed to cool on cooling rack about 15 to 20 minutes before icing.

Icing:

  • 1 cup powdered sugar 
  • 1/2 Tablespoon butter, melted
  • 1 Tablespoon lemon juice
Mix right before ready to spread on slightly cold bars. 

Combine ingredients in a small bowl. If needed, add a little more lemon juice or water until you get the desired consistency, it should be just barely pourable. Spread over bars and cool. These bars freeze well.
