Eggnog Quick Bread Loaf


  • ½ cup avocado oil
  • 1 cup white sugar 
  • 2 eggs, room temp 
  • 1 (3.4 oz) instant vanilla pudding mix 
  • 1 ½ cups milk
  • 1 ½ teaspoons vanilla
  • 1 cup white whole wheat flour 
  • 1 ¼ cup all-purpose flour 
  • 2 teaspoons baking powder 
  • ½ teaspoon salt 
  • 1 teaspoon nutmeg
  • 1 1/2 teaspoon cinnamon 
  • 1 Tablespoon demerara sugar
  1. Preheat oven to 350 degrees F and thoroughly grease a bread loaf pan.
  2. In a large bowl, beat oil and sugar until smooth then add eggs one at a time. Add pudding mix powder and stir to combine, then add milk and vanilla.
  3. Slowly mix in flours, baking powder, salt, cinnamon and nutmeg. Transfer batter to the prepared loaf pan. Sprinkle on demerara sugar over the batter. 
  4. Bake for 55-65 minutes or until an inserted toothpick comes out clean.
