Spiced Fig Bread

 


  • cup all-purpose flour (120g)
  • 1 cup wheat flour (120g)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder 
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup light or dark brown sugar (106g)
  • 1/3 cup neutral oil (80g)
  • 1/2 cup sourdough discard (120g), optional 
  • 1 large egg
  • 1 1/4 cups puréed figs(300g) 
  • 1 teaspoon vanilla

  • Preheat oven to 350F. Grease a 9x5-inch loaf pan with butter or baking spray. Purée fresh figs, stems removed, in the food processor, if not already done. 
  • In a medium bowl, whisk together the flours, baking soda, powder, salt, and spices.
  • In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the brown sugar and butter together on high speed until light and fluffy, about 3 minutes.
  • Beat in the egg and vanilla extract. Mix the figs in and then add the dry ingredients and fold together until just combined.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50 to 60 minutes or until a wooden pick inserted into the center comes out clean. Let cool in the pan for 20 minutes then remove and finish cooling on a wire rack.
