Blackberry Cobbler (Mountain Pudding)
- 1 cup flour (1/2 c whole wheat and 1/2 c all-purpose)
- 3/4 cup sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
Mix dry ingredients and gently stir in milk.
- 3/4 stick (6 Tbsp) butter, melted
- 4 cups fruit (ie. berries, peaches)
- 1/2 cup sugar
Pour melted butter into a 9x13 casserole and then top with batter. Cook mixed berries and sugar in a saucepan for 15 minutes. Gently arrange the berries over batter.
Bake at 350 degrees for 45 minutes.
