Blackberry Cobbler (Mountain Pudding)



  • 1 cup flour (1/2 c whole wheat and 1/2 c all-purpose)
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk

Mix dry ingredients and gently stir in milk.

  • 3/4 stick (6 Tbsp) butter, melted
  • 4 cups fruit (ie. berries, peaches)
  • 1/2 cup sugar

Pour melted butter into a 9x13 casserole and then top with batter. Cook mixed berries and sugar in a saucepan for 15 minutes. Gently arrange the berries over batter. 

Bake at 350 degrees for 45 minutes.
