Nacho Bake

  1 pound ground beef 1 large onion, chopped 1 large green pepper, chopped, optional 1 can (28 ounces) diced tomatoes, undrained 1 can (16 ounces) chili beans, drained 1 can (15 ounces) black beans, rinsed and drained 1 can (8 ounces) tomato sauce 1 envelope taco seasoning 1 package (13 ounces) regular tortilla chips 2 cups shredded cheddar cheese In a Dutch oven, cook the beef, onions and green peppers over medium heat until meat is no longer pink; drain. Stir in the tomatoes, beans, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes (mixture will be thin). In a 13-in. x 9-in. baking dish, spoon in meat mixture. Top with chips and cheese. Bake, uncovered, at 350° for 20-25 minutes or until golden brown. Original Recipe

3 tablespoons   butter 1 lb  lean ground beef 1   large white onion ,  diced 8   oz   baby portobello mushrooms ,  sliced 4   cloves   garlic ,  minced ¼   cup   all purpose flour 1 ½   cup   beef broth 1 ½   cup   heavy whipping cream 2   tablespoons   Worcestershire sauce 1   tablespoon   dijon mustard salt and pepper ,  to taste ¾   cup   sour cream (170g) 2   tablespoons   chopped Parsley ,  optional Rice or egg noodles, prepared  In a large skillet over medium-high heat, melt the butter. Add ground beef and brown the beef, breaking apart with a spatula. Add onion, cooking until onion starts to soften and become translucent, about 5 minutes. Add mushrooms and garlic. Lemon-Artichoke Risotto

2 cups chicken broth 4 tablespoons butter 1 onion, finely chopped 2 cups arborio rice 1 1/4 cups drained chopped canned artichoke hearts Grated peel of 1 lemon plus 2 teaspoons lemon juice Salt and pepper 2/3 cup grated parmesan cheese 1/3 cup chopped flat-leaf parsley 1/3 cup walnuts, toasted and chopped In a saucepan, bring the broth and 4 cups water to a boil, cover and keep at a simmer. In a large saucepan, melt 2 tablespoons butter over medium heat. Add the onion and cook, stirring, until softened, about 5 minutes. Add the rice and stir until lightly toasted, about 2 minutes. Stir in 1 cup of the broth mixture, bring to a simmer and cook, stirring, until the liquid is absorbed, 2 to 3 minutes.
