Bacon Brussel Sprouts

    First, cook about 4-5 pieces of bacon, take the bacon out and put in a couple chopped garlic cloves, then add the halved sprouts.  Sauté until your preferred “doneness”.     Then crumble the bacon and sprinkle it over the sprouts.

Crust: 8 Tbsp unsalted butter, melted  1/4 cup sugar  1/2 tsp salt 1 1/4 cup all-purpose flour Preheat oven 350. Melt butter in mixing bowl, with rubber spatula stir in sugar and salt. Stir in flour. Press evenly into foil lined 8x8 baking dish. Bake at 350 for 20-24 minutes, until deep golden brown.  Filling: 2 tsp cream of tartar  1 cup sugar 2 Tbsp all-purpose flour  1/4 tsp salt 3 large eggs 3 large egg yolks 2 Tsp lemon zest (about 2 lemons) 2/3 cup lemon juice (3-4 lemons) 4 Tbsp butter, room temperature  In a medium sauce pan, without heat, whisk dry ingredients. Whisk in eggs. Whisk in lemon zest and juice. Turn on medium heat to thicken, 5-8 minutes stirring constantly, until it reaches 160°. Move off heat and add in butter. Strain mixture. Pour onto crust and bake 8-12 minutes. Cool on wire rack for 90 minutes. Cut into 12 bars, wiping knife between each cut.

Prep Time: 15 minutes Total Time: 2 hours 15 minutes (includes chilling time) Servings: 16 bars Category: Dessert ⸻ Notes After Making Add ⸻ Ingredients Peanut Butter Layer ½ cup (8 tablespoons; 113g) unsalted butter, melted 1 cup (120g) graham cracker crumbs (about 8 full-sheet graham crackers) 2 cups (240g) confectioners’ sugar ¼ teaspoon salt 1 cup (250g) creamy peanut butter Chocolate Topping 2 tablespoons creamy peanut butter 1 cup (180g) semi-sweet chocolate chips ⸻ Instructions  Peanut Butter Layer  Line an 8-inch or 9-inch square baking pan with parchment paper or aluminum foil, leaving some overhang for easy removal. Break the graham crackers into pieces and place them in a food processor. Pulse until fine crumbs form.  Add the confectioners’ sugar and salt. Pulse a few times to combine.
