Peanut Butter Bars


Crust:

  • 1/2 c graham crumbs, 4 full sheets (60g)
  • 1/2 c pretzel crumbs or ground oats combo (60g) or bit more
  • 1/2 c butter, melted (113g)
  • 1 1/2 c powdered sugar (180g)
  • 1 c peanut butter (264g)
  • 1/2 c candy mix-in, optional (80g)
In medium bowl or food processor, mix together the crumbs, butter, sugar, and peanut butter. Stir in candy, optional. Press mixture into bottom of an ungreased 9×9 pan. 

Topping:
  • 1 c chocolate chips (180g)
  • 2 Tbsp peanut butter (33g)
  • Flake salt to sprinkle, optional
Melt remaining peanut butter and chocolate chips together in the microwave in 30 second intervals, stirring in between.
When the chocolate mixture is smooth, pour over top of the peanut mixture in the pan. Refrigerate for at least 30 minutes, then cut into 16 squares. Sprinkle with flake salt if desired.
