ATC Lemon Bars
Crust:
8 Tbsp unsalted butter, melted
1/4 cup sugar
1/2 tsp salt
1 1/4 cup all-purpose flour
Preheat oven 350. Melt butter in mixing bowl, with rubber spatula stir in sugar and salt. Stir in flour. Press evenly into foil lined 8x8 baking dish. Bake at 350 for 20-24 minutes, until deep golden brown.
Filling:
2 tsp cream of tartar
1 cup sugar
2 Tbsp all-purpose flour
1/4 tsp salt
3 large eggs
3 large egg yolks
2 Tsp lemon zest (about 2 lemons)
2/3 cup lemon juice (3-4 lemons)
4 Tbsp butter, room temperature
In a medium sauce pan, without heat, whisk dry ingredients. Whisk in eggs. Whisk in lemon zest and juice. Turn on medium heat to thicken, 5-8 minutes stirring constantly, until it reaches 160°. Move off heat and add in butter. Strain mixture. Pour onto crust and bake 8-12 minutes. Cool on wire rack for 90 minutes. Cut into 12 bars, wiping knife between each cut.
