Rhubarb Quick Bread

Makes 2 loaves ~3 cups rhubarb, chopped 2 cups all-purpose flour (240g) 1 cup white whole wheat flour (120g) 1 cup granulated sugar (200g) 1 cup packed light brown sugar (220g) 1 ½ teaspoons ground cinnamon 1 teaspoon baking soda ½ teaspoon baking powder ½ teaspoon salt ½ teaspoon grated nutmeg 4 large eggs, beaten 4 Tbsp orange zest, optional  1/4 cup orange juice or milk, optional 1 cup neutral oil (240 ml) 1 cup sourdough starter (240g), optional 1 cup chopped walnuts or pecans (120g), optional Demerara sugar, for sprinkling, optional Muffins: Preheat oven to 425°F. Line two 12-cup muffin pan. This will make about 24 muffins. Bread: Preheat oven to 350°F. Grease two loaf pans.  In a medium bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, baking soda, baking powder, and salt. Buttermilk Ranch Dressing

Prep Time: 5 minutes Chill Time: 2 hours Total Time: 2 hours 5 minutes Category: Dressing / Sauce Notes After Making Ingredients ½ cup (120g) buttermilk ¼ cup (56g) mayonnaise 1 tablespoon ranch seasoning Homemade Ranch Seasoning Alternative ½ tablespoon (about 4g) garlic powder ½ tablespoon (about 4g) onion powder ½ teaspoon dried parsley ¼ teaspoon salt ¼ teaspoon black pepper Instructions Combine the buttermilk, mayonnaise, and ranch seasoning in a small bowl. If making the homemade seasoning instead, add the garlic powder, onion powder, parsley, salt, and pepper. Whisk until smooth and well combined. Cover and refrigerate for at least 2 hours to allow the flavors to develop.  Stir well before serving.

  Crust: 1/2 cup butter, melted  2 Tablespoons brown sugar 1 cup AP flour Preheat oven to 325°.  Line a 8x8 baking dish with foil (can double for 9x14). In a medium bowl, using a fork, combine all ingredients listed above to form a soft dough  Press into baking dish and bake for 12 minutes or until crust edges slightly become golden brown. Set aside. Filling: 2 tablespoons AP flour 1 1/4 cups brown sugar  1 teaspoon baking powder  1/2 teaspoon salt 2 eggs 1/2 teaspoon vanilla  1/2 cup sweetened coconut 1/2 cup chopped pecans Mix in order and spread over crust. Bake for 20 minutes. Allowed to cool on cooling rack about 15 to 20 minutes before icing. Icing: 1 cup powdered sugar  1/2 Tablespoon butter, melted 1 Tablespoon lemon juice Mix right before ready to spread on slightly cold bars.  Combine ingredients in a small bowl.
