Instant Pot Kale and Sausage Penne with Lemon Cream Sauce

 

  • 2 Tbsp olive oil
  • 4 cloves garlic, finely chopped
  • 1 small onion, chopped
  • 1 lb sweet Italian sausage
  • 1 lb dried penne pasta
  • 1 cup chicken broth 
  • 3 cups water
  • 4-5 oz baby kale
  • 1 1/4 cups half and half
  • 1⁄2 cup grated Parmesan, plus more for serving 
  • Juice and zest of 1 lemon
  • Freshly grated nutmeg, to taste
  • Kosher salt and freshly ground black pepper, to taste


Sauté onion & garlic for a few minutes in oil, add ground sausage and brown. Add 4 cups liquid (chicken broth and water) and 1 lb penne pasta. Set on manual for 4 minutes. QR. Stir in baby kale bag, 1 1/4 cups half & half, lemon zest and juice, nutmeg, s&p, and 1/2 c Parmesan cheese. Turn IP to sauté and keep stirring 1-2 minutes or so until the sauce thickens. Top with more Parmesan, if desired.
