Peanut Butter Chocolate Chip Muffins

 


Ingredients:

1 cup all purpose flour

3/4 cup whole wheat flour

1/2 cup natural peanut butter

1/3 cup honey or maple syrup

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 egg

1 teaspoon vanilla extract

1/2 cup unsweetened applesauce (or 1 banana)

3/4 cup dark chocolate chips

1/2 cup walnuts, chopped, optional 

Directions:

Preheat your oven to 450°F and line a muffin tin with paper liners or grease well.

In a large bowl, whisk together the flours, baking powder, and salt.

In another bowl, mix the peanut butter, honey, milk, egg, vanilla extract, and applesauce until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the dark chocolate chips and nuts, if using.

Divide the batter evenly among the muffin cups, filling each about 3/4 full. 

Bake in the preheated oven for 5 minutes. Reduce the oven temperature to 350 degrees and continue baking another 14 to 16 minutes, until a toothpick inserted into the center comes out clean.

Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
