Cheesy Pork Carnitas Pasta Bake

 

  • 1 lb Pork Carnitas, precooked and shredded
  • 8 ounce pasta
  • 1 Tablespoon olive oil
  • 1 red bell pepper sliced
  • 2 Tbsp flour 
  • 2 cups heavy cream
  • 1/2 cup sour cream
  • 1/4 cup parmesan cheese
  • 1 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1 cup shredded cheese of choice 
  • Toppings: avocado, cilantro 

 

  • Bring water in a large pot to a boil and cook pasta until al dente.
  • Meanwhile, in a medium-sized skillet over medium-high heat add olive oil. Add peppers and sauté until tender. Whisk in flour. 
  • Add heavy cream, sour cream, parmesan cheese, chili powder, cumin, and paprika to the skillet. Whisk and let simmer until it starts to thicken. Add pork to the sauce and toss until coated and heated through. 
  • Pour into a 8x8 casserole and top with shredded cheese. Bake at 350 until cheese melted, slightly golden brown. Serve with optional toppings.
