Gyros
Meat
- 1 lb ground meat (beef and turkey or beef and pork)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon oregano
- Juice of 1 lemon
Alternative shortcut:
Instead of making the meat mixture, you can use approximately 5 fully cooked meatballs per person, halved.
Tzatziki Sauce
- 1 small cucumber, peeled, seeded, and finely chopped
- 1 cup plain non-fat yogurt
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh mint, chopped
- Juice of 1 lemon
- Salt to taste (optional)
For Serving (Optional)
- Pita bread
- Lettuce
- Roma tomatoes, diced
- Pickled red onion
- Feta or Parmesan cheese
- Olives
- Tzatziki dressing, below or store bought
- Cucumber, diced (especially if using store-bought tzatziki)
Option 1 – Homemade Meat (Slow Cooker Method)
- Prep the Crockpot
Place the chopped onion and 3 cloves of minced garlic in the bottom of the slow cooker. - Make the Meat Mixture
In a bowl, combine the ground meats with paprika and oregano. Mix gently until just combined. - Shape the Meat
Form the mixture into a compact loaf or log. - Cook
Place the meat loaf on top of the onions and garlic.
Squeeze the juice of one lemon over the meat.
Cover and cook:
- LOW: 3–4 hours
- HIGH: About 2 hours
- Carefully remove the meat from the slow cooker and slice thinly.
Option 2 – Meatball Shortcut (Oven Method)
- Preheat Oven
Preheat oven to 350°F. - Prepare Meatballs
Use approximately 5 fully cooked meatballs per person, halved.
Place on a lightly greased baking sheet or dish. - Bake
Bake for 10–12 minutes, until heated through and lightly browned.
Tzatziki & Topping Preparation
- Make the Tzatziki and Prepare toppings.
Combine all tzatziki ingredients in a bowl. Mix well and refrigerate while the meat cooks. - Serve
Assemble gyros with meat, sauce, and desired toppings.
