Nanaimo Bars


Base Layer
  • 8 Tbsp butter, melted
  • 5 Tbsp cocoa powder
  • 2 Tbsp sugar
  • 1¼ cups graham cracker crumbs (6 sheets)
  • 1 cup sweetened shredded coconut
  • ¾ cup walnuts (or almonds if preferred)
Line an 8×8” pan with parchment paper, leaving overhang for easy removal.

In a food processor, combine graham crumbs, coconut, nuts, melted butter, cocoa, and sugar. 
Pulse until mixture is finely ground and well combined. Press firmly and evenly into the bottom of the pan. Set aside.


Filling Layer


8 Tbsp butter, softened

2 cups powdered sugar

3 Tbsp heavy cream

2 Tbsp instant vanilla pudding powder

2 tsp vanilla extract 


Beat all filling ingredients with a hand mixer on medium speed until smooth. Spread evenly over the base layer


Chocolate Topping 

  • 6 oz semisweet chocolate
  • 3 Tbsp butter
Melt chocolate and butter together in a microwave-safe bowl in 30-second intervals, stirring between each. Let cool about 1 minute. Spread evenly over the filling layer. 

Chill at least 4 hours until fully set. Lift out using parchment, slice into squares, and serve.
