Rhubarb Mug Crisp or Cake (Microwave)

Rhubarb Crisp


Filling

  • ¾ cup rhubarb (fresh or frozen)
  • ½ teaspoon vanilla extract
  • 2 tablespoons white granulated sugar
  • 1 tablespoon brown sugar
  • ¼ teaspoon orange zest
  • ½ teaspoon cinnamon
  • 1 tablespoon all-purpose flour


Topping

  • 3 tablespoons quick rolled oats
  • 1 tablespoon all-purpose flour
  • 1 tablespoon brown sugar
  • ½ tablespoon white granulated sugar
  • ½ teaspoon cinnamon
  • 1 tablespoon unsalted butter, cold or frozen


In a bowl, toss chopped rhubarb with white sugar, brown sugar, orange zest, vanilla, cinnamon, and flour until evenly coated. Transfer the mixture to a microwave-safe mug (at least 12–14 oz capacity).


In a separate small bowl, stir together oats, flour, brown sugar, white sugar, and cinnamon. Cut in the cold butter until the mixture forms coarse crumbs.


Sprinkle the topping evenly over the rhubarb filling.


Microwave for about 2½ minutes, or until the fruit is bubbling and the butter has melted into the topping. Depending on microwave wattage, cooking time may range from 2–3 minutes.


Carefully remove from microwave and let stand until cool enough to eat, as the filling will be very hot.


Rhubarb cake

Serves 2

  • ½ cup (120 g) thick rhubarb purée (unsweetened, well drained if watery)
  • 1 large egg, room temperature
  • ½ cup (100 g) dark brown sugar
  • 1 tablespoon whole milk
  • 2 tablespoons vegetable oil
  • ½ teaspoon vanilla extract
  • 7 tablespoons (60 g) all-purpose flour
  • ½ teaspoon baking powder
  • Pinch of salt
  • Pinch of baking soda


In a medium microwave-safe bowl, whisk together rhubarb purée, egg, sugar, milk, oil, and vanilla until smooth.

In a separate bowl, stir together flour, baking powder, salt, and baking soda.

Add the dry ingredients to the wet ingredients and mix until the batter is smooth and fully combined.

Microwave on high for 90 seconds. Check for doneness and continue cooking in 20-second increments until cooked through, about 2 minutes total for a 1200-watt microwave.
