Instant Pot Indian Butter Chicken
2 tbsp butter
1 tbsp oil
2 pounds of chicken breast, diced into chunks
1 large Spanish onion
1 green pepper, chunked
1 tbsp of crushed garlic
1 cup of chicken broth
1 6oz can of tomato paste
1 14oz can of coconut milk
2 tsp of garam masala
2 tsp of curry powder
1 tsp of ground cumin
1 tsp of ground ginger
On Sauté mode cook chicken, onion and pepper 5-6 minutes or until chicken is lightly browned. Add in garlic and spices, cook 1 minute or until fragrant. Add in remaining ingredients. Cook 8 min, NPR.
Serve over rice or garlic naan.
