Key Lime Pie







¼ c. butter, melted or softened
1 ¼ c. graham cracker crumbs, 16 squares
2 Tbsp sugar
1/2 tsp salt

4 egg yolks
1 14 oz Sweetened condensed milk
Zest of 1 lime
1 oz lime juice (of 1 lime)
3 oz Nellie and Joes key west lime juice

Top with fresh whipped cream, if desired

Preheat oven to 350 degrees. Combine butter, cracker crumbs and sugar. Press crust into a 9in pie plate or metal spring-form pan. Bake for 10 minutes. Cool.

Whisk egg yolks and sweetener together, stir in zest and juice. Pour into pie crust and bake at 350° for 15 minutes. Cool 20 minutes before refrigeratIng 4 hours. Add topping, if desired.

Whipped topping:

2oz cream cheese, room temp, optional 
1/4 cup powdered sugar
1/4 tsp vanilla
1 cup heavy whipping cream 

Before starting, put a small metal bowl and beaters in the fridge for approximately one hour. Beat with an electric mixer cream cheese, sugar, and vanilla. Slowly pour in cream and beat for approximately 3 to 4 minutes or until the stiffness desired.
