Instant Pot Massaman Chicken Curry





1 tbsp oil
1 lb chicken breast, cubed (or 1 lb ground meat)
1/2 red onion, diced
2 garlic cloves, minced 
1 tbsp squeeze ginger or 1 inch grated fresh
2 tbsp massaman curry paste
1 tsp coriander 
1/2 tsp cumin 
1 can coconut milk 
1 tbsp better than bullion chicken base
1 tbsp fish sauce 
1 tbsp tomato paste
1 tbsp creamy peanut butter

After pressure cooking:
1/4 cup cashews
1 avocado, diced 
Juice of 1 Lime 

Rice or garlic naan, prepared separately 


On sauté mode: brown meat in oil season with salt, add in aromatics (garlic/onions) sauté a couple more minutes. Add remaining ingredients, except the after pressure cooking add ins. Cook under pressure for five minutes, NR. 

Release pressure, stir in 1 diced avocado, 1/4 cup cashews and juice 1 lime.

Serve over rice or with garlic naan, prepared separately.
