Jimmy Dean Breakfast Sausage Casserole

  • 1 lb regular sausage
  • 4 green onions, sliced
  • 1 cup shredded cheddar cheese
  • 4 eggs
  • 2 cups half and half or milk
  • 1 cup all-purpose baking mix, *see recipe and mixing note below* 
  • Optional toppings: sour cream, chopped tomatoes, chopped parsley, diced avocado
Preheat oven to 400°.

Grease a 2 quart casserole. Brown sausage and place at the bottom of the casserole dish, top with green onions and cheddar cheese. The eggs, milk, and baking mix together and pour over the cheese. Bake 45 minutes or until knife inserted in center comes out. Cool 5 minutes.

All-purpose baking mix
  • 1 cup all purpose flour
  • 1 1/2 teaspoons baking powder 
  • 1/4 teaspoon salt
  • 1 Tablespoon butter (or melted or oil)

In a medium bowl, add baking powder and salt to the flour and whisk. Work in butter or oil with fork or pastry cutter. If making ahead store in refrigerator. 

*NOTE: Whisk this prepared mix with a small amount of liquid first to fully incorporate then add in remaining liquids.*
