Strawberry Cake



Cake:

1 strawberry cake mix (Duncan Hines)

3 eggs

1/2 cup oil

1 cup (plus 2 tablespoons) strawberry purée (reserve 2 tablespoons for the frosting) To make: Puree 2 ½ cups of sliced frozen strawberries, thawed and drained, overnight in the fridge.


Frosting:

4 oz / 1 stick butter, softened 

8 oz cream cheese, softened 

2 cups powdered sugar

2 tablespoons strawberry purée

1 teaspoon vanilla 


Cake:


1) Thaw strawberries overnight, in a blender covered container. Once thawed, purée until smooth. 


2) Preheat oven to 350°


3) Whisk eggs, cake mix, oil and strawberry puree. 

Bake 3 layers at 350° for 20 minutes or 9x13 at 350 degrees for 23-25 minutes. Cool completely. 


Frosting:


Mix strawberries, vanilla, butter and cream cheese until smooth. Slowly mix in powered sugar. Frost cake and then refrigerate entire cake.
