Jessica’s Quiche
This is my favorite dish in the WHOLE WORLD! There is nothing else better than Mommy’s quiche. My favorite version is when she does diced up ham with green peas.

• 1 homemade or store-bought single-crust deep dish pie dough
• 1 cup cooked sausage, bacon, cooked ham, or chicken sausage
• 1/2 cup sautéed diced onion, thawed peas, chopped broccoli, or wilted spinach
• 4 large eggs
• 1 1/4 cups milk of choice (try 1/2 cup half & half + 3/4 cup almond milk)
• 1/4 teaspoon salt
• 1/4 teaspoon ground pepper
• 1 cup shredded cheese of choice (Monterey Jack, Colby, cheddar, etc.)
- Prepare the pie crust and place it in a deep-dish pie plate. If using fresh dough, par-bake according to package or recipe directions.
- Spread the cooked meat and vegetables evenly over the bottom of the crust.
- In a large bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cheese.
- Pour the mixture slowly into the crust, covering the fillings.
- Bake at 350°F for 40–45 minutes, until the center is set.
- If the crust begins to brown too quickly, cover the edges with a foil ring.
- Let rest 5–10 minutes before slicing.
