Peanut Butter Oat Balls

  • 1½ cups old-fashioned rolled oats
  • ½ cup creamy peanut butter
  • ⅓ cup honey
  • ½ cup chocolate chips
  • ½ cup dried fruit or chopped nuts (optional)

Instructions

  1. In a medium bowl, combine the oats, peanut butter, honey, chocolate chips, and dried fruit or nuts, if using.
  2. Stir until everything is evenly combined and forms a sticky dough.
  3. Scoop about 1–1½ tablespoons of the mixture and roll into balls.
  4. Place the energy bites on a parchment-lined plate or baking sheet.
  5. Refrigerate for 20–30 minutes, or until firm.
  6. Serve immediately or store for later.

Variations:

  • Substitute almond butter, cashew butter, or sunflower seed butter for the peanut butter.
  • Add 1–2 tablespoons chia seeds for extra nutrition.
  • Replace the chocolate chips with mini M&M’s, white chocolate chips, or butterscotch chips.
  • Use chopped pecans, walnuts, almonds, peanuts, raisins, dried cranberries, cherries, or coconut as mix-ins.
  • Sprinkle in cinnamon or a splash of vanilla extract for additional flavor.
