Ingredients
- 1¾ cups (210g) all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 2 teaspoons cornstarch, optional *chewier
- ¾ teaspoon salt
- 1 cup (220g) packed light brown sugar
- ½ cup (113g) unsalted butter, melted
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 1 cup (180g) mix-ins, such as: White chocolate chips, Semi-sweet chocolate chips, Butterscotch chips, Chopped nuts
Instructions
- Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper or foil, leaving about a 2-inch overhang on at least two sides.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cornstarch and salt.
- In a large mixing bowl, whisk together the brown sugar and melted butter. Add the egg and vanilla and whisk vigorously until the mixture is thick and well combined.
- Add the dry ingredients to the wet ingredients and stir with a spatula until almost combined.
- Add ¾ cup of the mix-ins and stir until evenly distributed.
- Transfer the dough to the prepared baking pan and spread into an even layer.
- Press the remaining ¼ cup of mix-ins into the top.
- Bake for 32–36 minutes, or until the edges are set and golden brown and a toothpick inserted into the center comes out clean.
- Let the cookie bars cool completely in the pan before lifting them out and cutting into squares.
