Chicken and Stuffing Casserole

  6 ounces   egg noodles 1 (10.5 ounce) can  cream of chicken soup 1  cup   sour cream 1/2 tsp garlic salt and onion powder  3 cups  shredded rotisserie  chicken 1/2   (3 ounce) package   stuffing mix (stove top sage) 1 cup  chicken broth 6 Tbsp butter Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch baking dish. Mix cream of chicken soup and sour cream together in a bowl; stir in chicken and noodles. Spoon mixture into the prepared baking dish; sprinkle with stuffing mix. Combine chicken broth and butter in a saucepan over medium heat until butter is melted; pour over stuffing layer. Bake in the preheated oven until casserole is bubbling and stuffing is browned, about 30 minutes.

16 oz bag of coleslaw mix  ½ cup mayonnaise  2 Tablespoons cider vinegar  2 Tablespoons sugar  2 Tablespoons Dijon mustard  1/2 teaspoon celery seed, optional  Place coleslaw in a large bowl. In a separate small bowl, whisk mayonnaise, vinegar, sugar, and mustard, celery seed (if using). Pour dressing over slaw and stir until combined. Serve after 30 minutes for a crunchier slaw or refrigerate for 2-3 hours for a more tender version.

  2 lbs frozen boneless skinless chicken breasts or tenderloins 1 jar (24 ounces) red salsa 1 can (14 ounces)  refried beans 1 can (4 ounces) green chilies  Kosher salt, as desired 3 Tbsp Penzey’s taco seasoning or 1 store pkt 1/4 bag  tortilla chips, divided 1 bag  Mexican cheese blend, divided Optional toppings: • guacamole: 1 avocado, (eye ball) 1/4 tsp each cumin, coriander, garlic powder, 1/8 tsp salt & 2 Tbsp lime juice • sour cream Place frozen chicken and salsa in the pot.   Ingredients 1.5  pounds  new  potatoes   diced 1.5 pound   bacon   cooked and crumbled (optional) ⅓   red onion   diced 2 hard boiled eggs   roughly chopped ½   cup   mayonnaise 1 tablespoon  yellow  mustard 1 tablespoon   sweet pickle relish 1/2 teaspoon   salt 1/4 teaspoon   pepper 1/8 teaspoon smoked paprika  Instructions Bring a large pot of water to a boil over high heat. Add in diced potatoes and cook until tender, 10 to 15 minutes. Drain well and rinse with cold water to cool. In a large mixing bowl, add in cooled potatoes with bacon (optional), onion, and eggs. In a small mixing bowl, whisk together mayonnaise, mustard, relish, and seasonings. Pour dressing over potatoes and toss until combined and everything is well coated. Cover and refrigerate at least 2 hours before serving.
