Quick Crustless Quiche

3 eggs
1 1/2 cups milk
1/2 cup baking mix
~1 cup add-ins: diced ham, sautéed diced onion, mushrooms or peppers, green onions, 4 slices cooked and crumbled bacon, drained spinach, etc
1/2 cup shredded cheddar cheese

Preheat oven to 350 degrees F.

In a mixing bowl, combine baking mix with a small amount of milk to incorporate. Then add in eggs and remaining milk. Beat for 2-3 minutes or until blended. Stir in add-ins and cheese. Transfer mixture to a greased 9-in skillet, pie plate or square baker.

Bake, uncovered, for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.

That looks totally delicious! I know we keep saying this...but we need to get together soon. Eric will be really busy starting July 1, so we'll have to plan a weekend when the boys and I come see you!

I adore quiche. Quiche, frittatas, omelets... all so good. This recipe looks like a winner.
