Sour Cream Mashed Potatoes


  • 4 medium potatoes, peeled, diced, boiled and mashed with the smallest amount of butter and milk so that the potatoes are quite stiff
  • 1/2 cup sour cream
  • 1 tsp dried green onion or chives
  • 1 Tbsp grated Parmesan 
  • 1 tsp seasoning salt
  • 2 Tbsp butter, sliced into pats
If you haven’t already, prepare the mashed potatoes as noted above. Butter an 8 x 8 casserole.

Preheat oven to 350°. Mix potatoes with sour cream, green onion, Parmesan and salt. Layer half of the potato mixture into the casserole dish. Dot with 1 tablespoon butter. Layer remaining potato mixture and dot with the remaining butter. Bake for 20 minutes.

Tips:
1) You can use leftover mashed potatoes.
2) This dish can be prepared several hours in advance and then cooked when ready. 
3) The casserole may be baked for up to 40 minutes (but covered after 20 minutes) with no ill effects, if you run into a time bind.
