Wholesome Pancakes

Ingredients

  • 1/2 cup rolled oats
  • 3/4 cups all-purpose flour
  • 1/2 cup whole wheat flour 
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk, divided (I use unsweetened plain almond milk with 3 Tbsp buttermilk powder stirred into the dry ingredients)
  • 2 large eggs
  • 1/4 cup salted butter, melted

Instructions

  • In a small dish, soak oats with 1/2c of the buttermilk while prepping other ingredients. In a large mixing bowl, stir together flour, sugar, baking powder, baking soda, and salt.
  • Whisk in oat mixture, remaining buttermilk, eggs, and melted butter just until combined.
  • Preheat a flat griddle over medium-high heat with bacon grease or oil, 5-6 setting. Preheat oven to 250°. 
  • Scoop 1/4 cup of pancake batter onto griddle. Let pancakes cook until bubbles form before flipping.
  • Cook other side until golden brown. Place cooked pancakes on a cookie sheet in a warm oven while cooking the remaining batter. Serve hot with butter & syrup or rhubarb sauce.
