Ingredients

Chicken

  • 1 ¾ lbs (750g) boneless, skinless chicken thighs
  • 2 tablespoons cornstarch
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons smoked paprika
  • 1 ½ teaspoons cayenne pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cinnamon
  • Pinch of grated nutmeg
  • 2 tablespoons olive oil

Pickled Red Onion

  • ½ red onion, thinly sliced
  • 2 tablespoons light-colored vinegar

Garlic Yogurt Sauce

  • 1 cup Greek yogurt
  • 1–2 garlic cloves, minced
  • Juice of ½ lemon
  • Salt, to taste

For Serving

  • 6 Greek pitas, warmed
  • 2–3 cups shredded romaine lettuce
  • 2 tomatoes, sliced
  • ½ cucumber, sliced
  • Tahini, for drizzling

Instructions

  1. Preheat the oven to 350°F. Lightly grease a standard loaf pan with nonstick cooking spray. Set a second loaf pan aside.
  2. Place the chicken thighs in a large bowl. Sprinkle with the cornstarch, salt, cumin, smoked paprika, cayenne pepper, coriander, turmeric, garlic powder, cinnamon, and nutmeg. Add the olive oil and toss thoroughly until the chicken is evenly coated.
  3. Layer the seasoned chicken thighs tightly into the prepared loaf pan, pressing them down as you go.
  4. Lightly grease the bottom of the second loaf pan with oil or nonstick spray. Place it directly on top of the chicken and press down firmly to compact the chicken.
  5. Transfer the loaf pans to the oven with the second pan still pressing down on the chicken. Bake for 40–45 minutes, or until the chicken reaches 165°F in the center.
  6. While the chicken cooks, place the sliced red onion in a small bowl and toss with the vinegar. Set aside to lightly pickle.
  7. In another bowl, stir together the Greek yogurt, minced garlic, and lemon juice. Season with salt to taste.
  8. When the chicken is cooked, remove the top loaf pan. If desired, broil the chicken on high for a few minutes to develop crispy, browned bits on top. Watch closely so it does not burn.
  9. Let the chicken rest for 10 minutes. Turn it out onto a cutting board and use a sharp knife to slice it thinly.
  10. To assemble, spread the garlic-yogurt sauce over a warm pita. Add the lettuce, tomato, cucumber, pickled red onion, and sliced chicken. Drizzle with tahini, if desired. Fold or roll and serve immediately.

Wine Pairing:

  • Sauvignon Blanc – Crisp acidity and citrus notes complement the warm spices and creamy yogurt sauce.
  • Dry Riesling – Bright acidity and a touch of fruitiness balance the cayenne and savory spices.
  • Unoaked Chardonnay – Clean, fresh, and lightly citrusy without overpowering the shawarma.
  • Dry Rosé – Refreshing and fruit-forward, with enough acidity to balance the richness of the chicken and sauce.

Prep Ahead:

  • The chicken can be seasoned and assembled in the loaf pan several hours ahead and refrigerated until ready to bake.
  • The pickled onions and yogurt sauce can also be prepared ahead.

Storage:

  • Refrigerate leftover chicken in an airtight container for up to 3–4 days.
  • Store the chicken separately from the pita and fresh toppings.

Freezer-Friendly:

  • The cooked chicken freezes well.
  • Cool completely, slice, and freeze in an airtight container or freezer bag for up to 3 months.
  • Thaw overnight in the refrigerator and reheat gently.

Reheating:

  • For the best texture, reheat sliced chicken in a skillet over medium heat until hot and lightly crisped around the edges.
  • An air fryer also works well.

Variations:

  • For less heat, reduce or omit the cayenne pepper.
  • Serve the chicken over rice or a salad instead of in pita.
