Skillet Enchiladas
- 1 Tbsp Oil
- 1/2 large onion, diced
- 1 lb ground beef or turkey
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 8 tortillas, taco-sized flour - cut in bite sized strips
- 1 can red or green enchilada sauce
- 1/4 cup water
- 1 cup shredded cheese blend
- 1/4 cup plain sour cream or greek yogurt, optional
- Monterey jack, shredded
- Salsa or salsa verde, optional
- Guacamole, optional
Heat pan with oil and sauté onion 2-3 minutes, add in meat, breaking up until browned. Add seasonings. Add tortilla strips, enchilada sauce and water. Stir until all strips are moistened. Add cheese. Serve with toppings of choice.
