Skillet Enchiladas

  • 1 Tbsp Oil
  • 1/2 large onion, diced
  • 1 lb ground beef or turkey
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 8 tortillas, taco-sized flour - cut in bite sized strips
  • 1 can red or green enchilada sauce
  • 1/4 cup water
  • 1 cup shredded cheese blend
  • 1/4 cup plain sour cream or greek yogurt, optional
  • Monterey jack, shredded 
  • Salsa or salsa verde, optional 
  • Guacamole, optional 


Heat pan with oil and sauté onion 2-3 minutes, add in meat, breaking up until browned. Add seasonings. Add tortilla strips, enchilada sauce and water. Stir until all strips are moistened. Add cheese. Serve with toppings of choice.
