Instructions

  1. Arrange the bacon slices in a single layer on a large baking stone or rimmed baking sheet. Do not overlap the slices.
  2. Place the pan in a cold oven.
  3. Set the oven to 425°F and bake for 16–28 minutes, depending on the thickness of the bacon and your desired level of crispness.
  4. Remove the bacon from the pan and drain on a paper towel-lined plate before serving.

Prep Ahead:

  • Cook a full batch and refrigerate or freeze for quick breakfasts throughout the week.

Storage:

  • Store cooked bacon in an airtight container in the refrigerator for up to 5 days.

Reheating:

  • Reheat at 350°F until the internal temperature reaches 150–165°F, or warm briefly in the microwave.

Freezer-Friendly:

  • For best results, slightly underbake the bacon (about 24 minutes) if you plan to freeze it.
  • Cool completely, then layer slices between sheets of parchment paper and store in a freezer bag for up to 3 months.
  • Reheat directly from frozen at 350°F until heated through and crisp.

Variations:

  • Sprinkle with cracked black pepper before baking.
  • Brush lightly with maple syrup during the last few minutes for maple bacon.
  • Add a pinch of brown sugar and cayenne pepper for sweet-and-spicy bacon.
  • Season with smoked paprika or everything bagel seasoning for extra flavor.
