Ingredients

  • 1½ pounds boneless skinless chicken breasts, cubed (or 3 cups cooked shredded chicken)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 small yellow onion, diced
  • 2 cups long-grain white rice
  • 1 tablespoon minced garlic
  • 4 cups chicken broth
  • 1 (8-ounce) jar salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream or half-and-half
  • 3 cups shredded cheddar cheese, divided
  • Bacon crumbles, optional

Instructions

Cook the Chicken

  1. Heat the olive oil and butter in a large heavy-bottomed pot or Dutch oven over medium heat.
  2. Add the cubed chicken and season with salt and black pepper.
  3. Cook for about 5 minutes, stirring occasionally, until lightly browned on the outside.
  4. Add the diced onion and continue cooking until softened and translucent.
  5. Transfer the chicken and onion mixture to a bowl and set aside.

Cook the Rice

  1. In the same pot, add the rice and minced garlic.
  2. Cook for 1–2 minutes, stirring constantly, until the rice is lightly toasted.
  3. Slowly pour in the chicken broth and salsa.
  4. Stir in the cumin and chili powder.
  5. Bring to a boil, then reduce heat to low.
  6. Cover and cook for 15–18 minutes, until the rice is tender and most of the liquid has been absorbed.
  7. Turn off the heat and let the rice rest, covered, for 10 minutes.

Finish the Dish

  1. Stir in the heavy cream and 2½ cups of the cheddar cheese.
  2. Return the chicken and onion mixture to the pot and stir until combined.
  3. Sprinkle the remaining cheese over the top.
  4. Add bacon crumbles, if desired.
  5. Cover for several minutes to allow the cheese to melt.
  6. Serve hot.
