Honey Cornbread

 


  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/3 cup white sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1 cup buttermilk or milk 
  • 1/3 cup vegetable oil or melted butter
  • 1/3 cup honey

  • Preheat oven to 400 degrees F. 
  • Spray 9×9 pan with non stick spray.
  • Combine all ingredients into a bowl. Stir well. Fold in additional ingredients below, optional. 
  • Pour into your prepared pan and baked for 20-25 minutes until the cornbread is a golden brown. Allow to cool and then cut.


Blueberry Cornbread
  • 1 1/2 cups blueberries

Mexican Cornbread
  • Reduce sugar and honey to 1/4 cup each
  • 4 ounce can green chilies 
  • 1 cup shredded Mexican cheese blend
