Pumpkin Sourdough Loaf

  • 100 g active sourdough starter
  • 200 g pumpkin puree
  • 50 g brown sugar, honey, or maple syrup 
  • 30 g oil
  • 200-220 g warm or room temperature water
  • 500 g all-purpose flour (325g white, 175g wheat)
  • 10 g salt
  • 1 1/2 tablespoon pumpkin pie spice (or 2 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp clove, 1/2 tsp allspice, 1 tsp ginger)
  • Optional: 1/2 c raisins or craisins
  • Optional: 1/2 c walnuts, chopped 
  • Optional: Swirl filling - 1/4 c Brown sugar and 1 tsp Pumpkin pie spice
