Pumpkin Sourdough Loaf
- 100 g active sourdough starter
- 200 g pumpkin puree
- 50 g brown sugar, honey, or maple syrup
- 30 g oil
- 200-220 g warm or room temperature water
- 500 g all-purpose flour (325g white, 175g wheat)
- 10 g salt
- 1 1/2 tablespoon pumpkin pie spice (or 2 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp clove, 1/2 tsp allspice, 1 tsp ginger)
- Optional: 1/2 c raisins or craisins
- Optional: 1/2 c walnuts, chopped
- Optional: Swirl filling - 1/4 c Brown sugar and 1 tsp Pumpkin pie spice
