Greek Chicken Burgers and Creamy Garlic Sauce
Serves 8
Ingredients
2 lbs ground chicken
1 cup breadcrumbs
1/4 cup mayonnaise
4 tablespoons chopped parsley
4 garlic cloves, minced
Zest of 1 lemon
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon black pepper
Olive oil, for cooking
For serving
Pickled cucumber slices
8 burger buns or pita
Dijon mustard
Lettuce
Sliced tomato
Thinly sliced red onion
Creamy Garlic Sauce (below) or tzatziki
Crumbled feta or provolone cheese
Chopped kalamata olives
Instructions
In a large bowl, combine the ground chicken, breadcrumbs, mayonnaise, parsley, garlic, lemon zest, cumin, and oregano. Season with salt and pepper. Mix gently with forks or your hands until just combined.
Divide the mixture into 8 equal portions and shape into patties. Press a small indent into the center of each patty to help them cook evenly.
Heat a large cast iron skillet over medium-high heat. Add a drizzle of olive oil. Cook the burgers for about 4 minutes per side, or until golden and cooked through.
While the burgers cook, prepare your toppings and toast the buns if desired.
To assemble, spread Dijon mustard on the bottom bun. Add lettuce, then the chicken burger, followed by tomato, pickled cucumbers, and red onion. Spread the top bun with sauce, then finish with cheese and olives.
Creamy Garlic Sauce
Ingredients
1 cup Greek yogurt
2 tablespoons grated garlic
3 tablespoons lemon juice
1 tablespoon olive oil
Pinch of salt
Instructions
Whisk all ingredients together in a bowl until smooth. Taste and adjust salt or lemon juice as needed. Chill until ready to use.
