Greek Chicken Burgers
- 2 pounds ground chicken
- 1 cup breadcrumbs
- ¼ cup mayonnaise
- 4 tablespoons chopped parsley

Creamy Garlic Sauce
- 1 cup Greek yogurt
- 2 tablespoons grated garlic
- 3 tablespoons lemon juice
- 1 tablespoon olive oil
- Pinch of salt

Instructions
Make the Creamy Garlic Sauce
- In a small bowl, whisk together the Greek yogurt, garlic, lemon juice, olive oil, and salt until smooth.
- Taste and adjust seasoning as needed.
- Refrigerate until ready to serve.
Make the Burgers
- In a large bowl, combine the ground chicken, breadcrumbs, mayonnaise, parsley, garlic, lemon zest, cumin, oregano, salt, and pepper.
- Mix gently with forks or your hands until just combined.
- Divide the mixture into 8 equal portions and shape into patties.
- Press a small indent into the center of each patty to help them cook evenly.
Cook the Burgers
- Heat a large cast iron skillet over medium-high heat.
- Add a drizzle of olive oil.
- Cook the burgers for about 4 minutes per side, or until golden brown and cooked through to an internal temperature of 165°F.
Assemble
- Toast the buns or pita if desired.
- Spread Dijon mustard on the bottom bun.
- Add lettuce, then the chicken burger.
- Top with tomato, pickled cucumbers, and red onion.
- Spread the top bun with Creamy Garlic Sauce or tzatziki.
- Finish with feta or provolone cheese and chopped kalamata olives.
- Serve immediately.
