Main Ingredients
- 1 cup lentils, rinsed and picked over
- 1¾ cups water or broth
- ½ teaspoon kosher salt
- Black pepper, to taste
Optional: Use water with 1 heaping tablespoon beef broth paste for extra flavor.
Optional Flavor Additions
- 2 sprigs fresh rosemary
- 4 sage leaves, chopped
- 3 garlic cloves, minced
- Bay leaves, spices, chopped onions, or other seasonings as desired

Instructions
- Add the lentils and water or broth to the inner pot of the Instant Pot.
- Stir in the salt, black pepper, and any additional seasonings or aromatics.
- Secure the lid and set the valve to Sealing.
- Select Pressure Cook and cook on High Pressure:
- 7 minutes for firmer, al dente lentils
- 10 minutes for softer lentils
- When cooking is complete, allow the pressure to release naturally for 10 minutes.
- Carefully perform a quick release to vent any remaining steam.
- Open the lid and discard any large aromatics, such as rosemary sprigs or bay leaves.
- Use a slotted spoon to transfer the lentils to a serving bowl or storage container.
