Chicken
- 8 bone-in, skin-on chicken thighs
- ½ cup extra-virgin olive oil
- Juice of 1 lemon
- Fresh garlic, minced (optional)
- Kosher salt, to taste

Honey Mustard Glaze
- 1 tablespoon grainy mustard
- 1 tablespoon honey, or more to taste
- Kosher salt, to taste
- Freshly ground black pepper, to taste

Instructions
- In a large bowl, toss the chicken thighs with olive oil, lemon juice, and optional garlic.
- Season generously with salt and pepper.
- Cover and marinate for at least 1 hour or up to 24 hours in the refrigerator.
- Preheat oven to 375°F.
- Lightly oil a roasting pan or baking dish.
- Arrange chicken thighs skin-side down in the prepared pan.
- Roast for 20–25 minutes.
- Flip the chicken and continue roasting for 10 minutes.
- While the chicken roasts, stir together the grainy mustard and honey. Season with salt and pepper to taste.
- Brush the honey mustard glaze evenly over the chicken.
- Broil for 5 minutes, or until the skin is golden brown and lightly caramelized.
- Serve immediately.
