Firecracker Casserole
- 1 1/2 lbs ground beef
- 1 cup onion, chopped
- 1 can black beans, rinsed and drained
- 1 1/2 tablespoons chili powder
- 2 teaspoons cumin
- 1/2 teaspoon salt
- 8-7in flour tortillas
- 1 can cream of mushroom soup
- 1 can 10 ounces diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
In large skillet, cook the beef and onion. Add beans and seasonings. Transfer half of the mixture to a greased 13 x 9 baking dish. Layer four tortillas. Add remaining meat mixture and top with remaining tortillas. Combine soup and canned tomatoes; pour over the tortillas. Sprinkle with cheese. Bake uncovered at 350° for 25 to 30 minutes.
